Tip 6. To Bring Sunshine into Your Day
Well I won’t distract you from jumping straight to the recipe and making this very easy lemon/lime curd. This is a combination of many different recipes discovered online and adjusted to make it taste the way I like it.
Ingredients
112g/3¾oz or 1/2 cup plus 1 tsp sugar
25g/1oz plus 1 tsp or 2 table spoons butter cut into pieces
2 large eggs, lightly beaten
Juice of 2 limes or 2 lemons
Freshly grated lime zest of 1 lime
Sterilise a glass jar and lid by pouring on boiling water and leaving for about 5 minutes. I use old jars.
Method
- In a heavy saucepan cook the sugar, butter, eggs and lime juice and zest over a moderately low heat. Whisk frequently, until it is thick enough to hold marks of whisk, about 12-15 minutes.
- Immediately pour the curd through a sieve into a bowl or sieve it directly into the glass jar, which ever is easy and makes the least mess. Lime/lemon curd can be made up to a week in advance, its surface covered with grease proof paper and stored in the fridge.
- Serve on toast or bread!
